Why the Reverse Sear Beats Every Other Method for Thick Steaks

You have probably seared a thick steak over screaming-hot coals and ended up with a gray band of overcooked meat around the edges while the center was still practically mooing. That frustrating result is exactly why the reverse sear exists. It flips the traditional approach on its head, and once you try it, you will never go back to the old way for any steak over an inch thick.
The concept is dead simple: cook the steak low and slow first until the interior reaches about 10-15 degrees below your target doneness, then blast it over high heat for a short sear to build the crust. The result is a steak with uniform color from edge to edge, topped with a deeply caramelized exterior that shatters when you cut into it.
Why Traditional Searing Falls Short on Thick Cuts
When you throw a cold, thick steak directly over high heat, the outside has to endure extreme temperatures for a long time before the center catches up. By the time the middle hits medium-rare at 130 degrees, the outer half-inch is well past medium and heading toward well-done territory. You end up with a bullseye pattern: gray on the outside, a thin ring of pink, and a cool red center.
With thin steaks under an inch, this is not a big deal because the heat reaches the center quickly. But anything over 1.25 inches thick, and especially those beautiful 1.5 to 2-inch ribeyes and strip steaks, needs a different strategy. That is where the reverse sear shines.
Setting Up Your Grill for the Reverse Sear
You need two temperature zones. On a charcoal grill, bank all your coals to one side. On a gas grill, light one or two burners and leave the others off. On a kamado, use a heat deflector for the low phase and remove it for the sear.
The indirect side should run between 225 and 275 degrees Fahrenheit. You are not smoking the steak here, you are just gently bringing the internal temperature up in a controlled way. No wood chunks needed, though a small piece of oak or hickory adds a pleasant background note if you want it.
Step-by-Step Process
- Season generously. Salt your steak at least 45 minutes before cooking, ideally the night before in the fridge uncovered. This dry-brines the meat and dries the surface for a better sear. Add pepper and any other rub right before it hits the grill.
- Place on indirect heat. Set the steak on the cool side of the grill with a probe thermometer inserted into the thickest part. Close the lid and let it ride.
- Monitor the internal temp. You are waiting for the center to reach 115-120 degrees for medium-rare (final target 130-135 after the sear). This typically takes 30-45 minutes depending on thickness and grill temperature.
- Rest briefly. Pull the steak off and let it sit for 5 minutes while you crank the heat. Open all vents on charcoal or turn gas burners to maximum.
- Sear over direct heat. Place the steak directly over the hottest part of the grill. Sear for 60-90 seconds per side until a dark, mahogany crust forms. Flip only once.
- Serve immediately. Because the steak was already rested during the heat-building phase, you can slice and serve right after the sear. No additional resting needed.
The Science Behind Why This Works
Gentle indirect heat gives the steak time to warm evenly. The temperature gradient from the surface to the center stays small because the cooking environment is mild. By the time the center reaches 115 degrees, the outer layers are only at 120-125 degrees instead of the 170+ degrees you get with a hot sear start.
The brief rest before the sear also helps. It lets the surface moisture evaporate slightly, which means when the steak hits the blazing-hot grate, the Maillard reaction kicks in almost instantly. Dry surfaces brown faster. Wet surfaces steam. You want browning, not steaming.
That rapid sear over extreme heat creates the crust without having time to overcook the interior. The steak was already warm throughout, so the sear only needs to do one job: build flavor on the outside.
Common Mistakes to Avoid
Even though the reverse sear is forgiving, a few pitfalls can trip you up.

Which Steaks Work Best
The reverse sear is ideal for thick-cut bone-in ribeye, New York strip, porterhouse, and tomahawk steaks. These cuts have enough mass to benefit from the slow warmup and enough marbling to stay juicy through the process.
Filet mignon works too, but because it is lean, you need to watch the temperatures more carefully. Leaner cuts are less forgiving if you overshoot by even a few degrees.
Skip the reverse sear for skirt steak, flank steak, hanger steak, or anything thinner than an inch. Those cuts cook so fast over direct heat that the reverse approach adds complexity without benefit.
Taking It Further
Want to add smoke flavor during the indirect phase? Toss two or three small wood chunks on your charcoal or in a smoker box on gas. Oak and hickory complement beef beautifully without overpowering it. Keep the smoke light, this is a steak, not a brisket.
You can also finish the sear with a cast iron pan placed directly on the grill grate instead of searing on the grate itself. A cast iron surface gives you more contact area and an even darker crust. Add a tablespoon of butter, a crushed garlic clove, and a sprig of rosemary to the pan during the sear for a restaurant-quality finish.
