Worth being upfront: this is a curation site, not a test kitchen running its own smokers around the clock. What you read is pulled together from grill and smoker manufacturer specifications, food-safety guidance (USDA safe internal temperatures), established pitmaster references, and active communities like r/BBQ and r/smoking. When we give a target temperature or a cook time, it traces back to those sources β we're not reporting numbers off a thermometer in our own backyard.
